Breakfast Dumplings

As it is said that breakfast is the most important meal of the day, here is a great way to add some variety to kick start your day.

Ingredients 

  • Canola oil 1 tsp (5 ml)
  • Diced mixed vegetables 1/2 cup (125 ml) (such as peppers, zucchini or mushrooms)
  • Eggs, lightly beaten 4
  • Pinch each salt and pepper
  • Shredded cheddar cheese ¼ cup (60 ml)
  • Wonton wrappers (about 24) 200 g (1 package)

Directions 

  • In a small nonstick skillet, heat oil over medium heat and cook vegetables for about 3 minutes or until softened.
  • Stir in eggs, salt and pepper and cook, stirring gently for about 3 minutes or until soft large curds set. Remove from heat and stir in cheese; set aside.
  • Place a few wonton wrappers on work surface and spoon about 1 heaping tsp (5 mL) into centre of each wrapper. Brush the edges of the wrapper with a bit of water and fold over to form a triangle to seal. Place on parchment paper lined baking sheet and continue with remaining ingredients.

  • Spray dumplings with cooking spray and bake in 400°F (200°C) oven for about 8 minutes or until golden and bubbly. Let cool slightly before eating.

Ingrédients 

  • D’huile de canola 1 c. à thé (5 mL)
  • De légumes variés coupés 1/2 tasse (125 mL) en dés (p. ex., poivrons, zucchinis ou champignons)
  • Œufs, légèrement battus 4
  • Une pincée de sel et de poivre
  • De fromage cheddar râpé 1/4 tasse (60 ml)
  • De carrés de pâte wonton (environ 24) 200 g (1 paquet)

Préparation 

  • Dans une petite poêle antiadhésive, faire chauffer l’huile à feu moyen et cuire les légumes pendant environ trois minutes ou jusqu’à ce qu’ils soient ramollis.
  • Incorporer les œufs, le sel et le poivre, et cuire en remuant doucement pendant environ trois minutes ou jusqu’à ce que de gros morceaux mous se forment. Retirer du feu et incorporer le fromage; réserver.
  • Placer quelques carrés de pâte wonton sur un plan de travail et mettre environ 1 c. à thé (5 ml) pleine de garniture au centre de chaque carré de pâte.
  • Étaler un peu d’eau au pinceau sur les bords du carré de pâte et les replier pour former un triangle à coller.
  • Placer sur une plaque à pâtisserie recouverte de papier sulfurisé et répéter l’opération avec les ingrédients restants.
  • Vaporiser de l’aérosol de cuisson sur les dumplings et les cuire au four à 200 °C (400 °F) pendant environ 8 minutes ou jusqu’à ce qu’ils soient dorés et qu’ils bouillonnent. Laisser refroidir légèrement avant de manger.
